Bristles could also be obtained from Boar hair- it's sufficiently bristly and boar hair brushes are common.
There are also natural plants such as horsetail (nicknamed bottlebrush) in Canada that I've been told can be used to scrub dishes. So it might also be sufficiently bristly.
